The 2021 Timorasso Derthona is one of the more restrained versions of this rediscovered variety readers will come across. Orchard fruit, pear, lemon peel, sage and chamomile are nicely woven together. Timorasso can be a bit rustic, but many of those harder contours have been tamed here. Pretty floral notes round out the finish. —A.G.
