The 2021 Ducks And Drakes comprises 84% Cabernet Sauvignon and 16% Cabernet Franc. The diurnal range during the growing season is huge: days can be as hot as 40 degrees Celsius and as low as two degrees Celsius overnight (it's usually about six degrees Celsius). This explains the flavor ripeness and alcohols and also the fine acidity and general balance of the wines. The Cabernet Sauvignon is the Reynella clone (Coonawarra), and the Cabernet Franc is C7V15. This is spicy and full without being heavy; the splay of cassis and blackcurrant through the middle palate and finish is sheltered by just enough leaf and fresh garden herbs that the wine has a profound elegance about it. Classy and concentrated, the tannins are ductile and chalky and extend through the finish. This is a lovely Cabernet. 14.8% alcohol, sealed under screw cap. —E.L.
