The base wine is a blend of 54% Pinot Noir and 46% Chardonnay from the Twelve Oaks estate vineyard, picked at lower brix to keep the acidity up. It’s immaculately clean, crisp, and fresh, with tart apple fruit. Technically a Brut Nature, it spent five years en tirage and still seems as young as the day it was first blended. Drink 2020 to 2035.
